Cocoa Selection

Cocoa Selection

The secret to making good chocolate is working with good cocoa. To do this, we select the region we want to work with, obtain the working methods of the farm, cooperative, or cocoa region, and finally look at the aromatic notes of their respective cocoas.

Roasting

Roasting

After previously cleaning the cocoa, we proceed to roast it. This process is fundamental for the cocoa to unfold all its aroma. Additionally, this process will help us subsequently remove the cocoa husk.

Winnowing

Winnowing

Once roasted, we remove the husk from the bean to obtain the cocoa nib, which is the useful part for making chocolate.

Grinding

Grinding

We grind the nibs until we obtain a liquid paste called cocoa liquor. This process releases the aromas and texture of the chocolate.

Conching

Conching

We improve the texture and flavor of the chocolate through a process of mixing and prolonged aeration.

Tempering

Tempering

We control the temperature of the chocolate to stabilize the cocoa butter crystals and obtain a shiny and crisp finish.

Molding and Packaging
7

Molding and Packaging

We pour the chocolate into molds and let it cool. Then we carefully package it to preserve its quality.
